BBQ LAMB CHOPS

Impress everyone with juicy BBQ lamb chops made on the EZ Turbo Charcoal Stove in the comfort of your home.

You will need:

  • 2 lamb chops
  • 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 4 cardamoms
  • 4 cloves
  • 1-inch stick of cinnamon    
  • 1/2 tsp turmeric powder
  • 1 tsp paprika powder
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 2 tsp dried mint
  • 1 tbsp Worcestershire sauce
  • 1 tbsp light soya sauce
  • 2 tbsp tomato paste
  • 1/3 cup honey
  • 1/3 cup apple cider vinegar
  • 1/3 cup water
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

For garnishing

  • Fresh rosemary, chopped


How to prepare:

  • Season the chops with salt, pepper and turmeric. Set aside.
  • Place the coriander, cumin, fennel, cardamoms, cloves and cinnamon in a grinder and coarsely pound the spices.  Combine the spices with the rest of the spice powders, mint, Worcestershire and soya sauces, honey, tomato paste, vinegar and water in a saucepan and bring to boil, on medium heat over the Stove.
  • Divide the sauce: 1/3 for marinading; 2/3 for glazing.
  • Marinade the chops with the marinading sauce. Set aside to marinade for 30 minutes.
  • Prepare the grill on the Stove by brushing oil on the cold grill grates. Wipe off excess oil and heat the grill on high heat until it smokes and oil is burnt off.
  • Place the chops on the hot grill for 4-minutes on each side.
  • Reduce to medium heat, brush with reserved sauce, close with a lid, and cook for another 4-minutes on each side.
  • Repeat brushing with sauce and flip to grill until chops are done (internal 760 C). Takes around another 4-minutes on each side.
  • Take off the grill and rest the chops on a plate and cover with foil to avoid drying out.
  • Glaze the chops.
  • Garnish with chopped rosemary.
  • Serve with preferred sides. ENJOY!
