Lovely, refreshing peaches and nectarines topped with a biscuity topping is a sweet delight.

You will need:

For the filling

  • 2 cups cubed nectarines
  • 2 cups cubed peaches (canned)
  • 4 tbsp juice from canned peaches
  • 1 small apple, cubed
  • ¼ cup brown sugar
  • 2 tbsp strawberry jam
  • 1 tsp vanilla
  • 2 tbsp unsalted butter, melted

For the biscuit topping

  • 120g all-purpose flour
  • 50g granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp unsalted butter (cool)
  • 1/2 cup milk
  • 1 egg yolk
  • Cinnamon sugar to sprinkle on top

For garnishing

  • Thin slices of halved peach and/or nectarine

For baking

  • 4 4-inch ramekins or a baking dish
  • Small flat baking tray
  • Grill
  • Dome shaped cover
