This cheesy buttery spicy tangy toasties is a burst of flavours in one bite awakening your taste buds.

You will need:

  • 4 slices of day-old firm bread (1-1½-inch thick)
  • 2 sweet pineapple rings (3/4-inch thick)
  • Jalapeños or green chili slices
  • 1 cup grated cheddar cheese
  • 1/2 cup mozzarella or any melting cheese (e.g., ricotta, gruyere, gouda, Havarti cheese)
  • 1tbsp olive oil
  • Dijon mustard
  • 1/3 cup salted butter (room temperature)
  • 2tbsp Parmigiano Reggiano or parmesan cheese
  • 2tsp dried parsley or rosemary
  • Salt and pepper to taste

For garnishing

  • Chili flakes
  • Gherkin

How to prepare:

  • Combine the two varieties of cheeses with olive oil. Set aside.
  • Separately combine the butter with the parmesan cheese, herbs, salt and pepper. Set aside.
  • Lightly char the pineapple slices on a grill or flat skillet over the Stove on high heat. Set aside.
  • Layer each toasty in the following manner: Spread mustard on two slices of bread. Then spread a generous layer of the cheese and olive oil mixture on each slice of bread. Sandwich the two slices of bread with the charred pineapple ring and slices of jalapeños.
  • Place the sandwich on the grill/skillet on low heat over the Stove. Cover with a lid to melt the cheese and lightly toast both sides of the sandwich. May take around 2-3 minutes on each side. Repeat for the second sandwich.
  • Spread both sides of the toasted sandwich with the cheese and herb butter mixture. Toast both sides of the sandwich again until golden brown. Repeat for the second sandwich.
  • Slice each sandwich in half and plate.
  • Garnish with chili flakes and gherkins.
  • Serve hot. ENJOY!
