This recipe can be made and enjoyed anytime, anywhere using the EZ Turbo Charcoal Stove.

You will need:

For the spicy potato

  • 4 large potatoes, parboiled and cubed (bite size)
  • 1 large onion finely, chopped
  • 4 medium green chillies, finely sliced
  • 4 cloves garlic, finely chopped
  • 1-inch piece of ginger, finely chopped
  • Few sprigs of curry leaves
  • 2 pieces of pandan (rampe) leaves (2-inch in length)
  • 2 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp chilli powder
  • Salt and pepper to taste
  • Few sprigs of coriander, finely chopped
  • 1/2 cup coconut milk
  • 2 tbsp ghee or vegetable oil

For the savoury pancakes

  • 150g all-purpose flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp baking soda
  • 1 tsp cumin seeds, lightly roasted
  • 1/2 tsp turmeric powder
  • 2 tsp sugar
  • 1 large egg, whisked
  • 1/3 cup milk
  • 2 tsp vegetable oil
  • Water
  • Salt to taste
  • Butter or vegetable oil

For garnishing

  • Paprika powder
  • Coriander leaves, coarsely chopped

How to prepare:

  • Spicy potatoes: Melt the ghee in a saucepan over medium heat on the Stove. Add onions, green chilli, garlic, ginger, and the curry and pandan leaves and temper until fragrant and onions are translucent. Then add the mustard seeds, dried red chilli, turmeric and chilli powder, and salt and pepper to taste. Once the mustard seeds start to crackle, add the parboiled potato cubes and coconut milk. Stir, cover and cook for around 3-5 minutes or until the potatoes are soft.
  • Savoury pancakes: Combine the dry ingredients in a mixing bowl. Whisk the egg, milk and vegetable oil and mix into the dry ingredients. Beat to a smooth batter. Adjust the consistency of the batter by adding water, if necessary. Preheat a flat pan over the Stove on medium heat. Grease the pan with butter or vegetable oil (fine layer). Pour a heaped spoon (large) of batter on the pan and starting from the middle run the spoon in a circular motion to evenly spread the batter in to a large flat pancake. When bubbles start forming on the batter, flip the pancake and cook until slightly brown.
  • Plate each pancake with the spicy potatoes.
  • Garnish with a sprinkle of paprika powder and coriander leaves.
  • Serve hot with preferred sauces and/or salad. ENJOY!
